We are still in the south, in the Minervois, more precisely in Badens. Here lives an aesthete and wine grower, a personality who almost makes every bottle of wine with his own hands: micro-cuvées according to his mood and his talent. A way to show that the word «terroir» has a meaning in the Languedoc, and, what’s more, that it’s a place to produce fantastic wines! [...]

“The Château du Cèdre resides at the top of the Cahors appellation for more than 15 years, thanks to the ambitious work in the vineyard under Jean-Marc’s direction and the sophisticated wine making of Pascal. Assistance comes from their terroir, one of the high-quality spots for wine making of the region.”

Generous, tense, with a complex tannin structure, it perfectly stands comparison with great wines from the (...)
Capricorn
December 22 – January 19
Patience and perseverance mark the sign of the goat—Capricorns are also known to “climb mountains” and are attracted to scaling new heights romantically, socially and even physically. This Earth sign is frequently stubborn, and has a few tried-and-true favorites, but with a gentle nudge will often try new things. Juicy yet complex, French Malbecs like the Château du Cèdre 2006 from Cahors (scoring well at 95 points) should delight any Capricorn.

Yves Gras, in his fifties, lives in Gigondas, an appellation of the southern Rhone, close to the Mediterranean. His estate, the Domaine Santa Duc, is situated at the feet of the Dentelles de Montmirail, a couple of kilometers outside of the village of Gigondas. Over here, Grenache, Syrah, Mourvèdre and Cinsault are planted up to an altitude of 450 meters. It’s from this altitude and the lime stone soils that Grenache and Mourvèdre get their surprising freshness, typical for Gigondas wines.

Cahors had a historically small harvest in 2010, mainly due to shatter or coulure (during difficult climatic conditions at the time of budburst, causing buds to fall to the ground). The high quality of the grapes allowed carrying out skin macerations for several weeks, slowly extracting tannins and aromas. According to their character and needs, the wines were aged either in concrete tanks, 500 litre casks or bigger wooden vats for two years. Today they fully express the high quality (...)
continueAt the beginning of the year, the Domaine Santa Duc has received a distinction for its new building at the winery in Gigondas.
The National Concrete Federation (Syndicat national du béton prêt à l’emploi) particularly prized the edifices integration into the surrounding landscape and nature. Both modern and discreet in style, the new construction is made of concrete, glass, wood and metal. Its 700 square-meters comprise a large area for bottle storage, but also a “tower” of wood and glass for (...)
“I lined up 19 malbec wines and started to think of a dish that would bring out their best and opted for that North African favourite: tagine.”
“[...]But then came the Château du Cèdre 2008, Cahors, France ($22.35, SAQ #972463), my old favourite that just made everything taste so sophisticated. As much as I enjoyed the others, this wine brought the tagine to another level. With each sip, I remembered what I loved about it so much: its inky colour, its aromas of blackberries, spices and smoke. I (...)
Seventh „Coup de Cœur“ fort he leading cuvée of the estate. As a “spiritual leader” of the Minervois, Pierre Cros belongs to those wine grower artists, that have found the Holy Grail in their vineyards and share their life’s work with us, by honouring our tables with their Devine brewage.
2007 Château du Cèdre - Le Cèdre
« […] Intense smell of spicy wood, vanilla, black fruit, balsamico and a little tobacco. Juicy, mellow, fine tannins, a backbone of fresh acidity, as well as honey and chocolate for the (long) final. Well-balanced and already accessible, with good ageing potential. »
Domaine Santa Duc produces many wines that I enjoy. This wine is a blend of 80% Grenache and 20% Syrah sourced from les Aubes and la Ponche in Vacqueyras. The les Aubes parcel has sandy slopes. The le Ponche parcel has lime-chalk soils. It was aged for 18 months in casks on lees.
