This white wine from the Minervois made from wide range of grape varieties (Grenache blanc and gris, Vermentino, Muscat, Picpoul blanc and gris ...), has already surprised me with its fresh acidity and minerality in the past. The vines grow predominantly in a location called “Les Costes”, a gentle hill chain with loamy and stony soil. This annual wine tasting, organized by the wine magazine VINUM, is less strict in its subject than the title may suggest and opens its doors to a few other appellations. Asian cuisine has found increasing popularity in Europe for years. Thai, Japanese or Korean, their different dishes tempt us with their spices, exoticism and precision of preparation. Often also with its simplicity and sincerity. Personally, I take every opportunity to dive into this universe of strange flavors and textures. The law calls for Cahors to be composed of at least 70 percent malbec, with merlot and tannat allowed as blending partners. Protected by forests and oriented to the northwest, the vineyard “Les Longues Verges” is divided by the border between the two Grand Cru villages Cramant and Chouilly. Its name originates from an old agricultural uni tof square measure, the “Verge”, covering an area of 1276 m2. In view of the topography and its orientation, the grapes ripen more slowly than in other terroirs and the natural yields of the vines are lower.

Regardless to the vintage, you will be able to recognize each cuvee by its typical taste, as each one has created a distinct identity with the help of its terroir. An identity and a style that has strengthened over time, certainly due to the fact that we are steadily reduce the application of sulphur in the winery.
